CAFE LYON

“When you catch a glimpse of a soufflé that walks through the restaurant around 7:30pm, everyone instantly turns their heads,” says owner and chef-de-cuisine of Café Lyon, Rainer Korobacz.



“We make sure it is always on the menu!”



With over 25 years of experience in fine dining, Korobacz has certainly perfected this piece-de-resistance – a most popular dish among diners at his local French bistro that pairs classic meals with refined techniques.



“They never fall – it’s as close to a full-proof soufflé recipe that you can get!”



Set on the highway of leafy Lindfield, Café Lyon is an understated yet whimsical nod to the neo-bistros tucked away on the arrondissements of Paris. Inside, an ensemble of happy chatter meets tight rows of linen tabletops and an open kitchen lined with copper pans.



“Five or six years ago, many sous-chefs and chef-de-cuisines from established restaurants began to branch out and open their own places,” explains Korobacz.



“To avoid the high costs, they took over small restaurants; they served high calibre food without all the frills of fine dining restaurants.”



Opening Café Lyon 4 years ago, Korobacz and his team has continued this philosophy.



The menu is simple; four entrees, four mains and four desserts and an array of seasonal specials - from citrus-cured salmon with prawn beignet to duck confit with braised red cabbage.



“A lot of people have the idea that French food is really heavy – and fifteen years ago, it was,” he says.



“Now, it is a lot lighter – and that is what we embrace; simplifying dishes but keeping the essence from them that people enjoy.”



Four years later, Café Lyon continues to flourish.



“Lindfield has been really great for me – I didn’t realise how much potential it had when it came along,” says Korobacz.



“Being a suburban restaurant, the real key is building up those returning diners and that is so important to us. We look after the people who come back and try our best to deliver the experience they are looking for.”
